Experimenting with new snack pairings is all well and good, but sometimes you want to go back to the basics. That’s why we’re sharing the recipe for the scones we made for the April 2nd Online Tea Party. These mixed berry scones are light and delicious, and pair wonderfully with afternoon or morning tea. This recipe makes 8 scones, enough to share with family and friends or keep a good supply for yourself (we can’t judge).
Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
5 tablespoons cold unsalted butter (cut into chunks)
1/2 cup frozen strawberries
1/2 cup frozen blueberries
1 cup heavy cream + a little extra to brush on the scones
Directions
Preheat the oven to 400 degrees Fahrenheit.
Start by sifting the dry ingredients together (flour, baking powder, salt, and sugar) in a large mixing bowl. Once everything is mixed, use a pastry blender or two forks to cut the butter into the flour mixture. You should end up with something the consistency of coarse sand. Gently mix in the berries. Make a well in the center of the mixture and pour in 1 cup of heavy cream.
Lightly flour a clean surface and place the dough on it. Gently press the dough into a rectangle about 12 x 3 x 1 1/4 inches. Cut the rectangle into 4 equal rectangles, then slice each of those rectangles into 2 triangles each. Don’t worry if they fall apart a bit, you can press them back into shape.
Carefully transfer the scones to a cookie sheet and brush with a bit of cream. Pop them in the oven and cook for 15-20 minutes. They should be set on top, and lightly browned at the bottom. Let them cool on a wire rack and enjoy!
