Snack Recipe: Tomato and Cucumber Salad

Sometimes a light, savory snack is the best thing to have, and this delicious salad fits the bill perfectly. Cool cucumber and juicy tomato get a flavor boost from herbs and oils, making this the perfect snack for balmy summer days and parties with friends.


  • 1 cucumber
  • 2 medium-sized tomatoes
  • 1 tablespoon olive oil
  • 3/4 teaspoon dried oregano¬†
  • 1/2 teaspoon salt


First, chop the tomatoes and cucumber into bite-sized pieces. You want them just large enough to have some substance, instead of thin slices.

Once the vegetables have been chopped, add the olive oil, oregano, and salt. Stir and mix thoroughly. Now your salad is ready to eat, though you can let it sit in the fridge for up a bit to soak up the flavors. 

This salad goes amazingly well with a chilled glass of Strawberry Suspense and a few friends to share the snack with.
